Autumn is upon us with all of its lovely produce — so let’s get into it! In this class, we’ll introduce you to unique ways to compose salads with interesting, less common ingredients and a couple simple soups to complement them. Students will learn the fundamentals of making a vinaigrette, the importance of textural variety, and the scope of diversity in salad-making. This class is always a crowd favorite as students come away having learned way more than expected!

Menu:

  • Thai Coconut Broccoli Soup

  • Lentil Soup over Crispy Toast with Poached Egg

  • Shaved Kohlrabi Salad with Parmesan + Mint

  • Spiced Butternut, Feta, and Kalamata Olive Salad

Please know this class is hands-on -- students will participate in preparing and cooking the multi-course meal to be shared family-style at the end of the class.
